Kale, Black-eyed peas, & onion

Ingredients:

* 1 large onion
* oil (I used grapeseed because it tolerates heat well) one package frozen black-eyed peas (16 oz)
* one bunch of fresh kale salt

How to make it:

1. Chop the onion. In a very large pot (I used an 8 quart pot)
2. cook the onion in the oil until it is translucent
3. Add 1 cup water and the black-eyed peas.
4. Bring to a boil
5. then reduce heat and cook 20 minutes
6. Pull the leaves off the kale stems (I save the stems for juicing later)and tear them into bite sized pieces
7. Add them to the pot
8. Stir occasionally until the kale is wilted
9. Cover and cook until the kale is tender
10. Salt to taste.
